Artichoke Topped With Spinach
This recipe is an alternative to the artichoke-spinach dip. Purchase a box of frozen artichoke hearts and prepare them in a broiler according to the package instructions. Then combine 2/3 cups of chopped spinach, 1 tsp of lemon pepper and salt in a small bowl. Then top each artichoke heart with the spinach mixture and put thin slices of brie on top. Stick it in the oven till the cheese melts and serve hot.
This is one of the simpler New Year’s Eve recipes that can be prepared in a few minutes. First place ½ a cup of golden raisins in a small bowl and fill it with boiling water. Set it aside for half an hour. Then prepare shrimps by peeling, deveining and cooking them to perfection.
Separately, heat 2 tbsp of oil in a skillet over medium heat. Add 4 chopped onions and cook it until it turns soft and begins to change color. Then reduce the heat and keep cooking the onions until they become golden brown. Then drain the bowl of raisins and combine it with the caramelized onions. Add 2 tbsp of chopped capers, 2 tbsp of freshly minced dill and salt and pepper to taste. Cook the mixture in the skillet for another 5 minutes or so. Transfer the mixture into a bowl to let it cool down. In the meantime, thinly slice a baguette. Top each slice with the onion spread and 1 shrimp.
Mini Greek Pizza Muffins
This is one of the New Year’s Eve recipes that will be loved by kids and adults alike because it’s a pizza in a muffin. First, heat 2 tbsp of olive oil in a skillet over medium heat. Then add 2/3 cups of chopped onions and 2/3 cups of chopped bell peppers. Cook until onions become tender and then transfer to a bowl to let it cool down.
In the meantime, preheat oven to 400°F and grease a muffin pan. Then in a bowl combine 1/3 whole wheat pastry flour, 1/3 cup all purpose flour, 2 tsp of baking soda, ½ dried oregano, 1 tsp sugar, ¼ tsp garlic powder and ¼ tsp salt. Then in the onion mixture add 1/3 cup of milk, 1/3 cup of crumbled feta cheese, 1 beaten egg, 2 tbsp tomato paste and 2 tbsp chopped olives. Whisk in the dry ingredients and mix well. Pour the mixture into the muffin pan till two-thirds full. Bake until muffins turn light brown. Serve warm.
Festive celebrations call for a drink as well. Combine 2 cups of pomegranate juice, 2 cups of vodka, 1 cup lime juice, ¾ cup of Grand Marnier, ¼ cup ginger juice and 2 tbsp of superfine sugar. When serving, use martini glasses. First sugar the rims, add ice and then finally pour the pomegranate mixture.
